It’s coming!
So I came in to work this morning, got my coffee, grabbed a croissant, went for the bacon - and stopped myself. Because starting THIS FRIDAY, I’ll be meat free for a while! That’s right, the TRY IT diet is upon us, and I’d be lying if I said I wasn’t feeling a little anxious.
I was a “vegetarian” for a while in high school, until my hair started to fall out due to protein deficiency. (Who would have thought that when the protein in your diet is coming solely from peanut butter, you’d be deficient?!) I started vegetarianism then because it seemed to be the cool, trendy thing to do. Unfortunately, I wasn’t doing it with my own good health in mind - I was eating my weight in french fries, saltine crackers, and other bready, starchy comfort foods.
I had never tried tofu, I wasn’t getting my vegetables, and my body started to rebel. I was tired all the time, I had dark circles under my eyes, and yes - my hair started falling out in clumps in the shower. My mom finally caught on and insisted that I start eating meat again, and I happily complied.
THIS time, it’s going to be different - because this time, I have you! A community! And an abundance of resources ready to tell me how to do this the healthy way. In the name of complete honesty, I have to admit that I am still not a picture of health. I’m not getting all my vitamins, I’m still short on energy, I’m eating the same 4 or 5 things all the time, and I still have bags under my eyes! I think the TRY IT Diet is going to be exactly the kind of overhaul I need.
So, I’m calling on you, community. What are your tips for me? What recipes would you recommend I try (keeping in mind that a Top Chef I am not, but I’m certainly competent in the kitchen)?

YOU CAN DO IT! I’m veg. for almost 3 yrs. and my Dr. says that as long as you eat a variety, you should get all the nutrients you need.
